Sinful Coconut Pie

With the holidays a couple months away I have decided to share the best coconut pie I have ever ate, make one now and I guarantee you`ll put this on your holiday sweets menu! Its sweet and very rich, always a winning dessert at the family get together every year.

First preheat the oven to 350°.

You will need:

1- nine inch pie crust

3- eggs

1 1/2 cup of sugar

1 stick of melted butter

1/3 cup of whole buttermilk

1- teaspoon of pure vanilla extract

1- Can of coconut

In a large mixing bowl add the eggs and sugar, stir. Stir in the melted butter, buttermilk and vanilla, making sure it is mixed well. Add the coconut and mix till coated.

Pour into the pie crust. Put into the preheated oven and bake for one hour, edges should be golden brown. Let cool before serving, may be refrigerated . Makes eight servings.

There is a story behind this coconut pie recipe.

My mother passed away when I was twelve so I did not know any old family recipes so when I met any old lady she would always share recipes so that I could cook for my family.

Mrs. Smith was 85 years old when I began to work for her as a driver once a week. Each week she made some flavor of pie and we each had a slice before I went home. When I asked for the recipe for the coconut pie I was stumped when I seen it had buttermilk in it. She said " that is what make my coconut pie so delicious".

That was the first year I made this coconut pie and every year after I was asked to " just bring several coconut pies" to the family get together each holiday dinner.

Come to think of it, I have never used another recipe for coconut pie since I got this one.

I hope you enjoy this coconut pie, Mrs. Smith passed away several years ago and at th age of 98.
