I was searching something from my digital photo album what ideas I could get for writing when I saw this photo of my Mango Cucumber Tomato Salad I made a few weeks ago. I was then licking my lips, craving for this tangy salad with lime flavor and that in the middle of the night. I have to make this again, maybe tomorrow or the next day.
1 Mango, not so ripe and cut in cubes
3 Tomatoes, sliced into small pieces or as you wish
1 Cucumber, sliced
1 lime, juiced
1 small root ginger, finely grated
1 tablespoon of honey
1 tablespoon or more of olive or vegetable oil
Salt and pepper to taste
HOW TO DO IT:
1. Just make the salad dressing by mixing the lime juice first with olive oil, grated ginger root, honey, salt, pepper and parsley.
2. Add the salad dressing to the bowl of mango, cucumber and tomato slices. Mix well.
3. Serve for 2 person as an appetizer.
