I have to admit I am a cookie baker, I find cookies easy and fun to bake. Over the years I have tried many 'new" recipes but I have always went back to those old fashion recipes I was taught as a young girl by the elderly ladies that did not use cookbooks, the recipe was in their head..
Peanut butter cookies are one of my favorites and this recipe makes six dozen so you can have cookies when you want them, its also good for school parties or your own family get together.
Lets get started, you`ll need :
1 - cup of soft butter
1- cup of peanut butter - Smooth or chunky
1- cup of white sugar
1- cup of brown sugar
1 -tablespoon of vanilla flavor
2 1/2 self rising flour
Preheat oven to 350°
In a large mixing bowl add the peanut butter, butter, white and brown sugar and mix well.
Add the eggs and the vanilla flavor, mix well.
Add one cup of flour at a time mixing well with each addition.
Using a spoon drop balls of cookie dough on a cookie sheet, using a fork dripped into flour make a criss cross pattern on the cookies.
Bake for around 10 minutes or until edges are lightly brown.
Remove to a cooling rack, store in a ziploc container.
Love peanut butter? Try adding a thin layer of smooth peanut butter in between two cookies for that extra kick!
NOTE : Six dozen cookies to many? you can cut this recipe in half! This cookie dough also stores well in the fridge so you can bake them over a few days if necessary.
